\u81fa\u7063\u56db\u9762\u74b0\u6d77\uff0c\u5b55\u80b2\u4e86\u5404\u7a2e\u6d77\u5cb8\u5730\u5f62\uff0c\u6d77\u7522\u8cc7\u6e90\u5341\u5206\u8c50\u5bcc\uff0c\u7136\u800c\u6d77\u6d0b\u4e2d\u6709\u8a31\u591a\u6709\u5bb3\u5fae\u751f\u7269\uff0c\u56e0\u6b64\u6709\u8a31\u591a\u990a\u6b96\u696d\u8005\u6703\u6dfb\u52a0\u6297\u751f\u7d20\uff0c\u4f86\u6291\u5236\u6709\u5bb3\u5fae\u751f\u7269\u3002\u7136\u800c\uff0c\u85c9\u7531\u751f\u7269\u6027\u4fdd\u5b58\u6280\u8853\uff08biopreservation\uff09\uff0c\u5247\u53ef\u4ee5\u540c\u6642\u9054\u5230\ufa09\u4f4e\u6297\u751f\u7d20\u6feb\u7528\u8207\ufa09\u4f4e\u98df\u7269\u906d\u6709\u5bb3\u5fae\u751f\u7269\u6c59\u67d3\u6240\u5f15\u8d77\u7684\u98df\u7269\u4e2d\u6bd2\uff0c\u6216\u662f\ufa09\u4f4e\u6d77\u9bae\u7522\u54c1\u5728\u5132\u5b58\u6642\u53d7\u74b0\u5883\u5fae\u751f\u751f\u7269\u6c61\u67d3\u7684\u6a5f\u6703\u3002<\/p>\n

\u751f\u7269\u6027\u4fdd\u5b58\u6280\u8853\u610f\u6307\u5229\u7528\u751f\u7269\u6216\u5fae\u751f\u7269\u6240\u751f\u7522\u7684\u76f8\u95dc\u7269\u8cea\uff0c\u4f86\u9054\u5230\u98df\u54c1\u4fdd\u5b58\u7684\u76ee\u7684\u3002\u800c\u76ee\u524d\u751f\u7269\u6027\u4fdd\u5b58\u6280\u8853\u7684\u76f8\u95dc\u7814\u7a76\u4e2d\uff0c\u53c8\u4ee5\u5229\u7528\u4e73\u9178\u83cc\u4f5c\u70ba\u751f\u7269\u6027\u9632\u8150\u5291\uff08biopreservative\uff09\u7684\u61c9\u7528\u5be6\u4f8b\u6700\u591a\u4e14\u6210\u6548\u826f\u597d\u3002<\/p>\n

\u904e\u53bb\u7684\u7814\u7a76\u986f\u793a\uff0c\u4e73\u9178\u83cc\uff08lactic acid bacteria\uff09\u8207\u767c\u9175\u6c34\u7522\u54c1\u4e4b\u9593\u6709\u5bc6\u5207\u7684\u95dc\u9023\u6027\u3002\u5728\u5404\u570b\u7684\u6d77\u7522\u52a0\u5de5\u98df\u54c1\u4e2d\u5982\u9183\u88fd\u9b5a\uff08pla-ra, pla-chom, kung-chom<\/i>\u548choi-don<\/i>\uff09\u3001\u9183\u8766 \uff08terasi\uff09\u3001\u9e7d\u6f2c\u719f\u8766\u3001\u51b7\u71fb\u9bad\u9b5a\u7b49\u7522\u54c1\u4e2d\uff0c\u4ee5\u53ca\u5728\u81fa\u7063\u7684\u50b3\u7d71\u767c\u9175\u98df\u4e2d\u5982\u9183\u8591\u3001\u91ac\u7b4d\u3001\u9178\u83dc\u3001\u8c46\u9f13\u3001\u91ac\u51ac\u74dc\u3001\u7834\u5e03\u5b50\u8207\u9e79\u8706\uff0c\u7686\u53ef\u767c\u73fe\u4e73\u9178\u83cc\u7684\u5b58\u5728\u3002\u5728\u9019\u4e9b\u7522\u54c1\u4e2d\u7684\u4e73\u9178\u83cc\u4e0d\u50c5\u6709\u52a9\u65bc\u7522\u54c1\u7684\u5473\u9053\u3001\u9999\u6c23\u548c\u8cea\u611f\uff0c\u540c\u6642\u4e5f\u964d\u4f4e\u4e86\u7522\u54c1\u7684pH\u5ea6\u9032\u800c\u63d0\u9ad8\u4e86\u98df\u54c1\u7684\u54c1\u8cea\u8207\u5b89\u5168\u6027\u3002\u9664\u4e86\u6d77\u7522\u52a0\u5de5\u98df\u54c1\u4e2d\uff0c\u4e73\u9178\u83cc\u4e5f\u53ef\u4ee5\u5728\u6c34\u751f\u52d5\u7269\u7684\u8178\u9053\u4e2d\u767c\u73fe\u3002<\/p>\n

\u4e73\u9178\u83cc\u4e4b\u6240\u4ee5\u5e38\u88ab\u61c9\u7528\u65bc\u751f\u7269\u6027\u9632\u8150\u6280\u8853\u4e0a\uff0c\u9664\u4e86\u56e0\u5927\u90e8\u5206\u4e4b\u4e73\u9178\u83cc\u591a\u88ab\u8996\u70ba\u662f\u5b89\u5168\u7684\u5fae\u751f\u7269\uff08g<\/span>enerally r<\/span>ecognized a<\/span>s s<\/span>afe\uff0cGRAS\uff09\u4e4b\u5916\uff0c\u53e6\u4e00\u4e3b\u56e0\u5728\u65bc\u4e73\u9178\u83cc\u53ef\u4ee3\u8b1d\u51fa\u5305\u62ec\u4e73\u9178\u3001\u904e\u6c27\u5316\u6c2b\uff08hydrogen peroxide\uff09\u3001\u96d9\u4e59\u91af\uff08diacetyl\uff09\u53ca\u7d30\u83cc\u7d20\uff08bacteriocins\uff09\u7b49\u591a\u7a2e\u6291\u83cc\u7269\u8cea\uff0c\u5176\u4e2d\u53c8\u4ee5\u7d30\u83cc\u7d20\u7684\u61c9\u7528\u6f5b\u529b\u6700\u53d7\u5230\u77da\u76ee\u3002<\/p>\n

\u7d30\u83cc\u7d20\u4e00\u822c\u6cdb\u6307\u7531\u9769\u862d\u6c0f\u967d\u6027\u6216\u9670\u6027\u83cc\u6240\u751f\u7522\u7684\u6297\u83cc\u6027\u86cb\u767d\u8cea\u6216\u80dc\u80bd\uff0c\u90e8\u5206\u4e73\u9178\u83cc\u6240\u751f\u7522\u7684\u7d30\u83cc\u7d20\u56e0\u70ba\u80fd\u6709\u6548\u6291\u5236\u75c5\u539f\u83cc\u7684\u751f\u9577\uff0c\u56e0\u6b64\u88ab\u5ee3\u6cdb\u5730\u61c9\u7528\u65bc\u98df\u54c1\u4fdd\u5b58\u4e4b\u4e0a\u3002<\/p>\n

\u5728\u570b\u5916\uff0c\u8af8\u5982\u6b64\u985e\u4ee5\u4e73\u9178\u83cc\u4f5c\u70ba\u751f\u7269\u6027\u9632\u8150\u5291\u7684\u61c9\u7528\u5be6\u4f8b\u9817\u591a\u3002\u4f8b\u5982\uff1a\u53ef\u4ee5\u5229\u7528\u4e73\u9178\u83cc\u6291\u5236\u591a\u7a2e\u5e38\u898b\u7684\u852c\u83dc\u8150\u6557\u83cc\uff0c\u5ef6\u9577\u852c\u83dc\u4fdd\u5b58\u671f\u9650\uff1b\u5c07\u4e73\u9178\u83cc\u52a0\u5165\u906d\u674e\u65af\u7279\u83cc\uff08Listeria monocytogenes<\/i>\uff09\u6c61\u67d3\u7684\u51b7\u51cd\u71fb\u9bad\u9b5a\u4e2d\uff0c\u53ef\u4ee5\u6291\u5236\u674e\u65af\u7279\u83cc\u7684\u751f\u9577\uff0c\u4e14\u6c92\u6709\u9020\u6210\u4e0d\u826f\u7684\u98a8\u5473\u7522\u751f\uff1b\u82e5\u63a5\u7a2e\u81f3\u65b0\u9bae\u725b\u8089\uff0c\u4e26\u4ee5\u771f\u7a7a\u51b7\u5e38\u4fdd\u5b58\uff0c\u524760\u5929\u5f8c\u624d\u7522\u751f\u5fae\u9178\u5473\uff0c\u4f46\u7121\u8150\u6557\u7570\u5473\u3002<\/p>\n

\u5728\u6d77\u7522\u4fdd\u5b58\u8207\u52a0\u5de5\u4e4b\u61c9\u7528\uff0c\u76f8\u95dc\u7814\u7a76\u5831\u544a\u6307\u51fa\u5206\u96e2\u81ea\u9b5a\u985e\u767c\u9175\u9183\u88fd\u54c1\u4e2d\u7684\u4e73\u9178\u83cc\uff0c\u53ef\u6709\u6548\u61c9\u7528\u65bc\u6613\u53d7\u6d77\u6d0b\u5f27\u83cc\u6c61\u67d3\u7684\u9183\u88fd\u98df\u54c1\uff0c\u5982\u5869\u8f9b\u7ae0\u9b5a\uff08squid shiokara\uff09\uff1b\u53e6\u4e00\u65b9\u9762\u5728\u53d7\u5230\u6d77\u6d0b\u5f27\u83cc\u6c59\u67d3\u7684\u868c\u86e4\u4e2d\u6dfb\u52a0\u4e73\u9178\u83cc\u7e7c\u7e8c\u990a\u6b96\u5f8c\uff0c\u767c\u73fe\u80fd\u6709\u6548\u6291\u5236\u868c\u86e4\u4e2d\u6d77\u6d0b\u5f27\u83cc\u7684\u7e41\u6b96\u3002\u4ee5\u4e73\u9178\u83cc\u70ba\u751f\u7269\u6027\u9632\u8150\u5291\uff0c\u53d6\u4ee3\u5316\u5b78\u6dfb\u52a0\u7269\u800c\u6e1b\u5c11\u651d\u53d6\u5c0d\u8eab\u9ad4\u9020\u6210\u8ca0\u64d4\u6216\u5371\u5bb3\u4e4b\u5316\u5b78\u6dfb\u52a0\u7269\uff0c\u9054\u5230\u63d0\u9ad8\u98df\u54c1\u5b89\u5168\u6027\u3001\u63d0\u9ad8\u98a8\u5473\u548c\u63d0\u9ad8\u98df\u54c1\u71df\u990a\u50f9\u503c\u3002<\/p>\n
